Alright guys, can we just give a big round of applause for the hubby and I! We recently made the decision to start living a full paleo lifestyle, and I’m not going to lie, the first few weeks were ROUGH. Nutritionists are right- sugar is an addition, and boyyy was I an addict. The first week I had constant headaches from being sugar deprived. I’m also not a big fan of coffee without the added sugar and milk, so I limited my caffeine consumption, which I’m sure added to the dreadful daily headaches.
There truly is a light at the end of the tunnel. If you started paleo and you’re beginning to question you why even started, DO NOT GIVE UP. You got this, and I am here for you. Drink some water and suck it up, because once you get past week three, you will feel like a million bucks!
Kaden and I have always been decently healthy when cooing at home, however with paleo you should not consume any dairy, bread, rice, pasta, or sugar. This means no milk, cheese, or my favorite Dryers Mint Chip ice cream. I may have eaten a whole carton of it before going paleo, but that’s beside the point.
We quickly realized that every meal we were already used to cooking could quickly be altered to fit our new lifestyle. Amen to coconuts!! Coconut milk, flour, and oil have become my new best friend and we use these babies in everything. Like these delicious paleo pancakes!
When we’re om the go and have limited time to whip up breakfast in the morning, these paleo pancakes have become our go to breakfast. We buy the Birch Benders paleo pancake mix from our local grocery store. They’re delicious and all you need is water and you’ll have a warm breakfast in a jiffy. These pancakes contain 0g of trans fat and a whole 7g of protein per serving. They’re also BPA free, dairy free, grain free, and you guessed it- there’s not a drop of added sugar. Mic drop.
The mix does include monk fruit, which is an added natural sweetener from a plant, much like stevia. So because of this, we try to limit ourselves to these, but you can also follow my recipe below and make them from scratch for an even better and healthier version.

Whit’s Recipe From Scratch:
Serves 4 (or two pancakes each for 2 people, but look out because 1 is pretty filling)
1 cup of coconut milk (or unsweetened almond milk)
3 tablespoons of coconut oil
1 teaspoon of pure vanilla extract
1/2 cup of coconut flour
1/2 cup of almond meal
1 pinch of sea salt
2 teaspoons of arrowroot powder
2 teaspoons of cinnamon
Directions: Mix all the ingredients together in a bowl and let sit for 1-2 minutes to thicken. Place the coconut oil on a hot pan before placing the mixture down so they won’t stick to the pan.
